Determination of Sodium Metabisulfite

Sulfurization is a process that is widely used in the food industry for the drying of fruits and vegetables, for the fresh storage of products used in the production of products such as jams and marmalades, and in winemaking.

Sulfur dioxide (SO2) and other substances used in sulphurization processes are as follows:

- Potassium bisulfite
- Potassium metasulfite
- Sodium bisulfite
- Sodium sulfide
- Sodium metabisulfite

Since sulfur dioxide is GRAS, its use is legal. However, in the Food Additives Regulation; The use of sodium metabisulfite and sulfur dioxide is limited to 15 grams per ton of product.

Sulfur dioxide is used for different purposes in the food industry apart from sulphuring:

- Bleach in cakes
- Loosening agent for making bread and crackers
- Antimicrobial in fruit juice, canned food and cereal products
