Determination of Organic Acids

Fumaric acid, Lactic acid, Malic acid, Acetic acid, Citric Acid and Ascorbic acids are organic compounds that show acidity and are classified according to the foods they are found in. Organic acids are separated as fermentation or fruit acids as follows.

- Fruit Acids: Ascorbic acid, Citric acid, Malic acid
- Organic Acids Formed as a result of Fermentation: Fumaric acid, Lactic acid , Acetic acid

Organic acids found naturally in many foods; It is important for quality, stability and sensory properties (taste, smell, color). Determination of organic acids in foods affects the planning of operations to be made in food production processes. By determining the acidity of the food, precautions are taken in matters such as heat treatment or storage conditions.
