Determination of Fumaric Acid

It is used in the food industry as a food additive, one of the strongest organic food acids. Fumaric acid is used in food and beverages, animal nutrition, cosmetics and pharmaceutical industries as a flavoring agent or antimicrobial due to its hydrophobic properties.

The purposes of use as additives in foods are as follows:

- Aroma ingredient
- Antimicrobial
- pH control agent
- Flavor enhancer
- Anti-moisture

As fumaric acid is tested as an additive in foods, "Fumaric Acid Analysis" is carried out as a quality criterion in fruit juices. It has been observed that fumaric acid is formed in fruit juices as a result of the growth and reproduction of some molds and fungi. For this reason, "Fumaric Acid Analysis" is carried out to determine whether the raw material is moldy or not.
