Cold Test (For Vegetable and Animal Oils)

One of the tests carried out within the scope of quality tests in oils is the Cold Test. Cold Test is carried out in herbal and animal tests. The Cold Test is the measurement of the resistance of oils to precipitation at 0oC and 4oC temperatures.

The oil sample to be analyzed is first heated to 130 oC. Then, it is rapidly cooled to 0oC and clouding of the oil is observed. The main components of clouding that may occur in oils are triacylglycerols or wax esters.

Likewise, oils as minor components; may include hydrocarbons, free fatty acids and alcohols, diacylglycerols and phospholipids. Cold test is a test performed on oils other than extracted oils.
